Innovative canning rack allows you to use the same canner for both water bath and steam canning jobs. Built-in thermometer with three color-coded elevation settings eliminates guesswork and makes timing a snap. Large stainless steel 24-quart liquid capacity pot can be used as normal stock pot when canning season is over. Water bath capacity: 8 pints or 7 quarts. Steam capacity: 9-pints, 8-quarts, or 5-half-gallons. Not recommended for use on smooth top ranges. Heavy weight with prolonged high heat can damage some flat cooktops. Important: Steam canners and water-bath canners are not recommended for canning low-acid foods. Please consult a reliable guide before canning.

I've used a lot of water bath and pressure canners. This was my first experience with a steam canner, although steam canning had been recommended to me several years ago. My friend told me she used to have a stainless steel steam canner but now all she can find is aluminum, so when I saw this I said, "OK, let's give it a try." I know the Victorio name from their juicer, and it's a quality company. True to my expectations, this canner lives up to the Victorio name. It is heavy-duty 18/8 gauge stainless steel, has excellent instructions for both steam and water-bath canning. It's easy to use, easy to clean, and extremely durable. The gauge on top is accurate, folks, and takes the guesswork out of when to start the timing. Eight jars at once (while steam canning) is marvelous! This is an excellent product, and appears very durable. Naturally, with all the steam escaping from the vent holes in the lid, the lid does rumble around quite a bit on the pot. This is to be expected, and doesn't mean the canner isn't working properly. The thermometer on the lid is a great feature! It actually didn't reach the "green" zone until after I thought the water was already boiling, so if I had not have had that thermometer, I might have accidentally started timing too early - the gauge lets you know excatly when the temperature inside the canner is hot enough to start timing! I'm happy that it's a thinner type of stainless steel. If it was a heavier grade it would be impossible to lift when full of water to carry over to the sink. I haven't used it as a steam canner yet. I've water bath canned pickled okra and eggs, salsa, pureed tomatoes, pizza sauce, tomato soup, and strawberry and peach jam! The lid is a joy to work with! The handle doesn't get hot enough to need to use a hot pad to remove it from the pot. The gauge takes the guess work out and now I KNOW when the water is at the right temperature to begin timing. The little holes on the side of the lid are very handy to release the steam and cuts down on the burping sometimes necessary when the water boils and there is too much steam in the pot. Expensive yes, but I won't have to worry about this one rusting out like my enamelware did. Good purchase! |
